Valentine's Day Blitz: Day 8, Breakfast Round-Up

Good Morning Sunshine!

Nothing says L-O-V-E like french toast!  French toast is one of those foods that says you went the extra mile and that's what I think Valentine's Day is all about.  However, V-day is on a Tuesday this year, and most of us have school, work, etc.  We can have our cake, or in this case toast, and eat it too, with this easy prep-ahead recipe.  Start Valentine's Day off on a sweet note that your sweetheart or whole family will be thinking about all day!

*Shortcuts*
1.) I'm doing a little extra cheating here:)  At Christmas, my Aunt Judy went on a canning rampage and I had a jar of her cinnamon-apples left over.  If you need to make your's though, do it the night before and you'll have plenty serve as a side dish with dinner or spoon over vanilla ice cream - or even better, dolce de leche ice cream!

2.) Monday night go ahead and make the egg dip and seal it up in tupperware so it's ready to go.

3.) Also the night before, mix your cream cheese and apples together and refrigerate.

4.) If you have one, break out your panini maker!  I had mine out from making pressed sandwiches last night so I decided on this route.  If time is an issue and a sit down breakfast is out of the question, this is a great option because the filling is sealed into the bread like a pocket.  Put a little maple syrup in a to-go container and send them out the door with it!

Cinnamon-Apple Stuffed French Toast

Ingredients:

4 slices of bread
4 tbls cinnamon-apples
3-4 tbls cream cheese
3 eggs
1/4 cup milk or cream (whatever is on hand)
1/4 tsp vanilla extract
cinnamon
butter or cooking spray


Directions:

1) Heat skillet to medium-high and melt butter or coat with cooking spray.

2.) Beat eggs with vanilla, milk and cinnamon to taste - set aside

3.) Mix cream cheese and apples together (look for this approximate consistency)


4.)  Dip each slice of bread into the egg mixture saturating completely.

5.)  Divide the apple mixture between 2 slices of bread and spread out, but not quite to the edges.


6.)  Top with remaining slices of bread.  (If using a panini maker, be sure to trim your sandwich to fit.)

7.) Cook for 3-4 minutes on each side.  (Or wait for the panini maker to stop steaming and open easily.)

8.)  Garnish with cinnamon and serve warm with maple syrup!
